This is a good story, Kristi. I am still smiling and shaking my head. What is it with some of these recipe writer folks anyways? That photo you show of the example-to-aim-for tuna cake. I mean, crikey. Those look like they were fried in a vat of fat to get a crunchy look like that. Had the recipe said: Get yourself a gallon of oil and dump it in your pan…you woulda said: No Way. And you would have saved all that tuna…

Argh. Don’t get me started on recipes that are incomplete or down play an ingredient or technique…

This was such a fun read…Thank you!
