Sold! Hey Mark. The lovely eggplant I just purchased from the Saturday market will be featured tonight in a recipe of Butter-roast Eggplant and Tomatoes with Freekeh and Koch-Kocha (from Diana Henry cookbook, “From the Oven to the Table”). I will say though, with 100% certainty, that next Saturday the dish for me will be your Eggplant Bolognese. Cannot wait. Obviously it will be another winner…yes indeedy, a WOW. I say this every time I make one of your recipes.
