I admit that there is an ego boost to getting included in a big ass, established pub. But at what cost? Because cost to us, the writer/reader flock is time. At the end of the day, readers and writer pals are what we want.
There are lots of great pubs out there to facilitate our quest. We might like the idea of the old fogey, 12 course, high-falutin ones accepting our stuff. But we don’t need ‘em.

About the Mac and Cheese. Sometimes it doesn’t matter how much French, Italian, Japanese, (or you name it) cuisine you enjoy. A good hit of the Mac is what’s often needed to keep us real.
Trouble is (some of you pubs other there, you know I’m talking to YOU…) Half the time you (the pub)won’t admit that you crave the basic mac/chee combo just like the rest of us. The remainder of the time you won’t tell us your preference of recipe. Which is a huge problem because there are a million ways to cook this fine comfort food dish.
Did I mention I have a recipe for Mac that is straight fire?🙄
