Re the roast chicken and stock you do:
1.Add leftover vegs to the stock and chunks of that chicken,
2. mix, in a tiny recycled jam jar with a lid, couple tablespoons of cornstarch to twice to three times as much water, shake,shake shake,
3. Slowly add as much as you want to the simmering broth mixture to thicken to your happiness,
4. Add several good glugs of whipping cream for taste, trust me,
5. Put in a greased casserole dish and top with frozen puffed pastry you already thawed,
6. Bake at 400F for about 50 min
That’s it. Chicken Pot Pie.
A scoop of cranberry sauce while eating and watching a movie will give you no regrets
This pie freezes nicely in individual portions for future binge watching suppers.
