You have inspired me. I love seeing brandade on a menu and have ordered it occasionally. My issue is that I am not a fan of cod even though my family on both my mother’s side and my father’s are cod aficionados. Salt cod and fresh.
Now, thanks to this essay of yours, I want to experiment with other fish.
I’ll keep you posted.
P.S. Are you familiar with a recipe for salt cod fillets roasted in milk? If not, my parents wouldn’t forgive me if I didn’t email it to you!
